Abstract

This paper reflects on my experience completing an online, asynchronous nutrition course to fulfill a prerequisite for accelerated nursing programs. The course provided a foundation in nutrition through lecture, reading, and case studies, allowing me to connect scientific concepts to clinical situations. I was able to develop my time management, organizational, communication, and critical thinking skills while exploring cultural, socioeconomic, and environmental factors that influence nutrition and health. This course helped prepare me for nursing school and it encouraged me to continue exploring the relationship between nutrition, culture, and health.
